It’s National Biscuit Day on the 29th May and to celebrate this we have been asked to celebrate in true style with The Groovy Food Company to recreate their delicious Chunky Coconut & Cherry Biscuits!

The Ingredients

125g The Groovy Food Company Organic Virgin Coconut Oil
75g golden caster sugar or xylitol
1 egg
225g plain flour
1 tsp baking powder
1 tsp vanilla extract
25g cornflour
85g glace or dried cherries, chopped
3 tbsp desiccated coconut




How to make Chunky Coconut & Cherry Biscuits

First I melted the The Groovy Food Company Organic Virgin Coconut Oil in its jar with boiled water in a separate bowl. Then whisked together the coconut oil and sugar until creamy.

Baking with The Groovy Food Company Family ClanAa pinch of salt and the remaining ingredients (except the desiccated coconut and cherries) then whisk to combine – the mixture then resembled breadcrumbs.

Next I chopped the cherries and then stirred them through mixture, then I got my hands in and squeezed firmly to form a dough.
Baking with The Groovy Food Company Family ClanNow I needed to shape the dough into two 14cm logs, wrapped in cling film and twisted the ends like a cracker. Then placed them in the fridge to chill for 20 minutes.

Whilst they are chilling heat the oven to 180C/160C fan/gas 4 and line two trays with baking parchment. After about 20 minutes take the cling film off and slice the dough into circles (or more like ovals in my instance, oops!) cutting about 1cm thick and space well on the trays.  All I needed to do now was scatter over the desiccated coconut and very lightly pushed down on each biscuit with the palm of my hand.

Bake them for 15 mins until golden and leave to cool on the trays for 10 mins, then transfer to a wire rack to cool completely.

I do love coconut, and these, I just can’t stop eating! We are having a BBQ tomorrow seems it is a Bank Holiday weekend after all, so these will be put out for all to have. I know they will be the first to go, as they truly are amazing! Light crunch, and I am pretty impressed that I was able to make something as nice as this. I am good at cooking, but baking is not my expertise.
