Alesha Dixon has teamed up with The Groovy Food Company to make a Jamaican Gingerbread Cake which is also Gluten Free.

Award-winning British brand The Groovy Food Company has partnered with foodie mum and presenter on Britain’s Got Talent, Alesha Dixon, to create a range of delicious, healthy recipes and show consumers how best to use the brand’s natural and unrefined foods to feed the body’s overall health and wellbeing so this is where her Jamaican Gingerbread Cake was born.

This recipe is inspired by Alesha’s Jamaican roots, as she loves to cook with spices from the region. With strong flavours and a deliciously sticky texture, the gingerbread is a fantastic afternoon treat to serve with a cup of tea in the afternoon.

We have been challenged to recreate this recipe, so lets get started!

First I needed to gather the following ingredients, most were available from the local super market apart from blackstrap molasses which I found in Holland & Barrett.

Ingredients:

85g The Groovy Food Company Virgin Coconut Oil, plus extra for greasing

4 tbsp The Groovy Food Company Dark Agave Syrup

3 tbsp blackstrap molasses

175g ground almonds

50g The Groovy Food Company Coconut Flour

1/2 tsp bicarbonate of soda

1 tsp ground allspice

2 tsp ground cinnamon

1 1/2 tbsp ground ginger

100g full-fat coconut milk

3 medium eggs, separated

1 tsp vanilla extract

For the caramel

75g The Groovy Food Company Coconut sugar

100g full-fat coconut milk

few drops vanilla extract

The recipe cuts into 10-12 slices and preparation time is 15 mins with a cook time of 55 mins.

Lets get making the Jamaican Gingerbread Cake with Sugar Caramel.

First I needed to grease and line a loaf tin with baking parchment. Heat oven to 170C/150C fan/gas 2. I missed this when I searched for ingredients, so I’ve used a cake tin a loaf tin would work best though.

Next I tipped the coconut oil, agave and molasses into a saucepan and set over a low heat to gently warm and melt, stirring occasionally.  Set this aside to cool a little.

Meanwhile sift the almonds, coconut flour, bicarbonate of soda, ground ginger, ground allspice, ground cinnamon and pinch salt into a large bowl.

Now I separated my eggs and whisked the coconut milk, egg yolks and vanilla into the pan of the cooled syrup, then pour the contents of the pan into the dry ingredients and stir well.

In a clean bowl with clean beaters, I whisked up the egg whites to peaks. Then beat ⅓ of the egg whites into the cake mixture, then gently fold in the rest.

I spooned the mixture into the prepared tin and baked for 45-50 mins.

Leave to cool in the tin for 10 mins, then transfer to a wire rack to cool completely.

Caramel Sauce

To make the caramel sauce I measured the coconut sugar and 50ml water into a pan and heat until bubbling. Cook for 2-3 mins then add coconut milk and vanilla.

Turn down the heat and simmer for 15 mins stirring until thickened, being careful not to let it burn. This took about 30 minutes for my caramel to start to thicken.

Leave to cool and thicken a little more then drizzle over the cooled cake and serve, delicious!

Our Thoughts

This has been quite a simple recipe to make and follow, Daddy J kept saying I would never make it as it should be as his Nanna used to make one that was the best… Well I did, it came out amazing, all laughs on him. The cake was moist, and cooked to perfection. The caramel really finished it off well and even he went back for a second serving.

This would also be perfectly served with a scoop of vanilla ice cream
